Dinner at the Tiny Apartment

We have a tiny apartment — only 18 square meters. But that doesn’t stop us from enjoying other people’s companies. Most days, it’s just me and my husband, and before one year ago, it was just me. We have my family stay with us when they visit us from Siquijor (all four of them), we also have my cousins when they are here in Cebu, and we also love playing hosts to my husband’s family. Tomato & Basil Spaghetti

As you all know, I love spaghetti (Oh, I love spaghetti!!). Type in “spaghetti” in the search bar, and it’ll lead you to more than five entries. I eat spaghetti almost every week. If I’m not cooking it at home, I’m eating it in a fastfood restaurant (e.g. Jollibee). I’m all for easy to prepare spaghetti because I sure do not want to wait a long time before I can eat them. Chickpeas Salad Sandwich

I was going to call this chickpea “tuna” salad sandwich. The chickpea, according to many sources I read in the Internet, is supposed to taste like “tuna,” and is a good substitute of tuna for those trying the vegetarian or vegan diet. I’d say, the chickpeas did not taste anything like tuna. It tasted like, well, chickpeas! So, I’m not going to fool anyone by mislabeling a chickpeas salad as a “faux tuna” salad or “vegan tuna” salad. Despite it not tasting like tuna at all, I found the chickpeas salad really, really, really delicious, and creamy. The cheapest pizza crust in all of Philippines is in Dumaguete.

In Dumagute, we found probably the cheapest pizza crust in all of Philippines — P18 for a 10″ pizza crust from Lee Cimbali Cafe, at the basement level of Lee Super Plaza.

Banana-Coconut Flour Pancakes

My husband and I have been frequenting the Farmers’ Market at SRP, and last Saturday, we bought half a kilo of bananas. Because we had a rather heavy dinner last night (thank you family!), I decided to make a healthier breakfast to try to make up for the scrumptious dinner. These banana pancakes are an update to these Flourless, 3-Ingredient Pancakes as today’s pancakes involved more than three ingredients and incorporated a new twist.
