Last month, my mother sent me three bunches of plaintain bananas. They were already very ripe and I could not eat all of them even if I eat them for every meal and in-between meals. What do to with overripe bananas? I recalled last summer when my mother cooked “maruya” made of over-ripe bananas mixed with butter and some flour. I decided to make them using the overripe bananas I had but the maruya turned out sour. Turned out I should have added sugar. To balance the sourness, I topped the maruya with vanilla ice cream and maple syrup. I think it was a winner. 😀 I think anything with vanilla ice cream is a winner.
P.S. I’m not sure what “maruya” is in English. I just decided it should be “fritters.”
